He has traveled the globe hunting, fishing, foraging, preparing delicious food, writing and teaching classes about it all. He shares insight into preparing freshwater (sturgeon, walleye, salmon, drum) & saltwater fish (reef, Alaskan halibut, red), ideal keeper sizes for best cooking, upland game birds and roasting plucked birds, secrets to tasty waterfowl (even making diver ducks delicious), dry aging specific cuts of meat with bone-in, temperatures and ideal aging environment, 1,000’s of eatable mushrooms, plants to avoid, foraging tips for identifying, and much more!
